There is a growing interest in the food, medicinal and pharmaceutical industry, for new biomolecules and new sources for known rare biomolecules, as well as for novel techniques suitable for extracting biomolecules. In our research, we suggest uses of the recovered biomolecules and by-products of the peanut to green fruits that grow mostly in the southern Arava. In the early stages of the growing season, regular dilution is performed to reach optimal fruit load on the tree. During the dilution, about 30% of the fruits are removed at various stages of development from peanut to green. Although these fruits are characterized by a very high content of polyphenols and carotenoids with a high potential for beneficial health activity, there is currently no use of diluted fruits, and the ability to utilize them to produce health products is an immediate added value to the crop waste.
