Starch is one of the most abundant and economical renewable biopolymers in nature. Octenyl succinic anhydride modified starches (OSA-starch) are designed by carefully choosing a proper starch source, path and degree of modification. This enables emulsion and micro-encapsulation delivery systems for oil based flavors, nutrients, fragrance, agrochemical, and pharmaceutical actives. Spray drying, the most common flavor encapsulation process, faces constant challenges with retention of volatile compounds, oxidation of sensitive compounds, and manufacturing effieciency. Specialty OSA-starches showed capability of 40% flavor load and 50% spray drying solids, resulting above 90% flavor retention and low flavor oxidation.
