In arapidly changing world, the food industry is facing some dramatic challenges.Technology in general, can provide some of the tools to face these challenges.Food shortage, food security, food safety, health and wellness represent someof the drivers for change in this industry. Food microbiology techniques have arole in each and every one of these. In this talk we will review some of thesetrends, the needs reflected by the global food industry, and how foodmicrobiology research and development can become part of the solution.
